Soft and fudgy gluten free brownie recipe made with coconut sugar and coconut milk.
Preheat oven to 350F degrees.
In a medium size bowl, add the coconut sugar, melted coconut oil, and vanilla. Use a hand mixer and beat for 1 minute on high. Add the egg and mix to combine.
In another bowl, add the paleo flour mix, cacao powder, salt, and mix well using a whisk.
Pour the wet batter over the dry ingredients and use a hand mixer until everything is just combined. Add the walnuts, chocolate chips, and use a spatula to mix well.
Grease a 7.5" X 6" inch baking dish with coconut oil or spray with avocado oil. You can use a bigger baking dish, but I like tall, fat, brownies. Pour batter into dish and bake in the oven for 25 minutes, or until a toothpick comes out clean.
I used Bob's red mill paleo flour mix for this recipe, which is highly recommend. But you can use any gluten free all-purpose flour mix.
