Chewy amaretti cookies that are paleo and gluten free. These cookies are made with coconut sugar and almond flour, and are so easy to make.
Dip your hands in water and using a cookie dough portion scooper (that is about 1.2 tablespoons in size) or a spoon, scoop some dough and form it into a ball. The water will prevent the mixture from sticking to your hands.
You can then roll the ball into coconut sugar, or coconut flakes (or just leave it as is) and place it on a sheet tray lined with parchment paper. Some of cookies in the photo are rolled in coconut sugar, some in coconut flakes, and the rest are as is.
