Amaretti Cookies (Paleo, Gluten Free)

Chewy amaretti cookies that are paleo and gluten free. These cookies are made with coconut sugar and almond flour, and are so easy to make.



  • 4 egg whites
  • Pinch salt
  • 1 cup coconut sugar
  • 1 teaspoon vanilla paste or extract
  • 1 1/2 teaspoon almond extract
  • 4 cups almond flour


  1. Preheat oven to 325F.
  2. Use a hand mixer and beat the egg whites on high with a pinch of salt until they get fluffy. Continue beating and start adding the coconut sugar little by little until it’s all incorporated and completely melted into the egg whites. The mixture will not get to stiff peaks because of the coconut sugar, but should be very fluffy.
  3. Add the vanilla and almond extract and beat again for a couple of seconds to get it mixed in.
  4. With the mixer on low start adding the almond flour. Once the mixture gets too thick to continue using the mixer, switch to a wooden spoon and incorporate the rest of the almond flour.
  5. Dip your hands in water and using a cookie dough portion scooper (that is about 1.2 tablespoons in size) or a spoon, scoop some dough and form it into a ball. The water will prevent the mixture from sticking to your hands.

  6. You can then roll the ball into coconut sugar, or coconut flakes (or just leave it as is) and place it on a sheet tray lined with parchment paper. Some of cookies in the photo are rolled in coconut sugar, some in coconut flakes, and the rest are as is.

  7. Stick a whole almond on top of the cookie for decoration.
  8. Bake at 325F for about 20 minutes. Let cookies cool on a wire rack.
  9. Store cookies in a cool dry place.
