Sugar Free Lemonade

This lemonade recipe uses a simple syrup made fro monk fruit which makes it perfect for diabetics and the keto diet.

Ingredients

  • 1.5 cups monk fruit sweetener
  • 4.5 cups filtered water
  • 1.5 cups fresh lemon juice about 10 lemons
  • Fresh mint & blueberries optional

  • 1.5 cups fresh lemon juice
  • 4.5 cups filtered water
  • 1/4 cup maple syrup
  • 8 large strawberries fresh or frozen & thawed

Instructions

For The Sugar Free Version

  1. Add the monk fruit and 1.5 cups of water to a small pot. Cook over medium heat until the sweetener is dissolved, about 5 minutes. Turn heat off pot and let cool to room temperature or add some ice if you want to cool it quickly.

  2. Meanwhile, juice 1.5 cups of lemon juice in a bowl or pitcher add add 3 cups of water to it. Add 1 cup of the simple syrup and check for seasoning. I find this is the perfect balance, but if you want it sweeter add the remaining 1/2 cup of simple syrup. To serve, muddle or smash some blueberries and mint in the bottom of a glass using a fork, pour in some ice, and top with sugar free lemonade. Enjoy!

For The Strawberry Version From Facebook

  1. Add 1.5 cups of fresh lemon juice and 4.5 cups water to a large pitcher or bowl. Add the maple syrup and strawberries. Use a stick blender or transfer mixture to a blender and blend on high for 20 seconds.

  2. Check for seasoning, you may want more maple syrup. Serve immediately or allow to cool in fridge for 1 hour. Will keep in the fridge for 3 days.
