Soft and fudgy gluten free brownie recipe made with coconut sugar and coconut milk.

Ingredients

  • 3 eggs
  • 1 cup coconut sugar
  • 1.5 teaspoons vanilla extract
  • 1 cup coconut oil or butter melted
  • 1 cup Paleo flour mix
  • 3/4 cups raw cacao powder
  • ¾ teaspoon salt
  • 3/4 cup toasted & chopped walnuts
  • 1/2 cup chocolate chips I use Hu or Evolved

Instructions

  1. Preheat oven to 350F degrees.

  2. In a medium size bowl, add the coconut sugar, melted coconut oil, and vanilla. Use a hand mixer and beat for 1 minute on high. Add the egg and mix to combine.

  3. In another bowl, add the paleo flour mix, cacao powder, salt, and mix well using a whisk.

  4. Pour the wet batter over the dry ingredients and use a hand mixer until everything is just combined. Add the walnuts, chocolate chips, and use a spatula to mix well.

  5. Grease a 7.5" X 6" inch baking dish with coconut oil or spray with avocado oil. You can use a bigger baking dish, but I like tall, fat, brownies. Pour batter into dish and bake in the oven for 25 minutes, or until a toothpick comes out clean.

Recipe Notes

I used Bob's red mill paleo flour mix for this recipe, which is highly recommend. But you can use any gluten free all-purpose flour mix.
