This is my ultimate mashed potatoes recipe that is light, buttery, and creamy. The infused cream adds a lot of flavor to the mashed potatoes and the ricer helps make a light consistency.

Ingredients

  • 3 pounds russet potatoes
  • ½ cup each heavy cream & whole milk
  • 1 stick unsalted butter room temperature
  • 1 sprig fresh rosemary thyme, and sage
  • 3 black peppercorns
  • 2 cloves garlic smashed
  • Kosher salt & fresh black pepper

Instructions

  1. Peel the potatoes and place them in a cooking pot covered by 3 inches of cold water. Add enough salt to the water to make it taste like the sea and bring to a gentle boil for 40 minutes, or until a knife can easily pierce the potatoes. You want the potatoes to be very soft, but not fall apart. Drain the potatoes and return them to the pot to stay warm.
  2. While the potatoes are boiling, take the butter out of the ridge and add the milk, cream, garlic, thyme, rosemary, sage, peppercorns, and a pinch of salt to a small pot. Set pot over medium-low heat and allow the cream and milk to get infused with those yummy flavors. Make sure it doesn’t boil and turn off after it’s been steeping for 10 minutes.
  3. Place the stick of butter in a large bowl and use the potato ricer to rice the potatoes directly on top of the butter. Mix well, make sure the cream mixture is warm, and strain the cream into the bowl with the mashed potatoes and mix well. Check for seasoning, you may need more salt. Make sure not to over-mix the potatoes, as they will get gummy. Potatoes can sit at room temperature or be made one day ahead and reheated. To keep warm or re-heat, place bowl on top of a pot that has a few inches of water and keep the heat over low and stir the mashed potatoes every 15 minutes while covered with tin foil. Enjoy!
