Grain Free Chocolate Granola Bars

Homemade granola bars that are loaded with dried fruits, nuts and seeds. The granol abrs are vegan and perfect for the paleo diet.

Ingredients

  • 1 cup almond butter
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil
  • 2 teaspoons vanilla
  • 1 cup dried fruits your choice of dried cherries, apricots, prunes, raisins
  • 1 cup walnuts and/or pecans, almonds, cashews
  • ¼ cup sunflower seeds and/or pumpkin seeds
  • 1/4 cup hemp harts
  • 3 tablespoons chia seeds
  • ¼ cup ground flax seeds
  • Zest of one orange

Chocolate Topping:

  • 4 oz of dark chocolate bar or chips or 2/3 cup chocolate chips

Or make your own chocolate topping:

  • 2 oz cocoa butter or 1/3 cup packed grated butter
  • 1/3 cup cocoa powder
  • 1 tablespoon maple syrup
  • ½ tablespoon coconut oil
  • ½ teaspoon vanilla
  • pinch salt

Instructions

  1. In a bowl add the almond butter, maple syrup, coconut oil, and vanilla.

  2. Place bowl over double boiler and mix with a spoon to get all ingredients incorporated together.
  3. Finely chop up the dried fruits and along with the rest of the ingredients (walnuts, sunflower seeds, hemp hearts, chia seeds, ground flax seeds) add them to a food processor and buzz them up a few times to break up the nuts and mix the ingredients nicely (or to a desired consistency). If you don’t have a food processor, just chop up the walnuts finely and then add the rest of the ingredients.

  4. Add the fruit, nuts and seeds mixture to the almond butter mixture.
  5. Add the orange zest and mix very well.
  6. Transfer the mixture into to a 8x10 inch or 8x8 inch pan lined with parchment paper and pack down the mixture into one even solid layer.

For the chocolate topping:

  1. Place a bowl over double boiler and add 4 oz of chocolate bar or chips and slowly melt them. Then, pour the melted chocolate over the nut mixture in the pan.

  2. If you’d like to make your own chocolate, add the cocoa butter, cocoa powder, maple syrup, coconut oil, vanilla and salt over a double boiler. Stir the mixture with a whisk until the butter is melted and the mixture is smooth. Let it cool down a bit and pour over the packed down granola mixture.

  3. Stash in the refrigerator for a couple of hours so that the chocolate hardens. To serve the granola bars, cut them up in 1x1 inch squares.
  4. The bars can last up to a week in the refrigerator.
