Ingredients

  • 4 eggs pasture raised
  • 1/3 cup maple sugar or coconut sugar
  • 2 cups plain, unsweetened almond milk 2 cups whole milk works also
  • 1 can full fat coconut milk 1 cup heavy cream works too
  • Fresh grated nutmeg
  • 1 teaspoon vanilla extract

Instructions

  1. Separate the egg yolks into a medium size bowl, add the coconut sugar, and beat on high with a hand mixer for 1 minute, or until the sugar has completely dissolved. Add the almond milk, coconut milk, 1/4 teaspoon fresh grated nutmeg, vanilla, and stir to combine.

  2. In a separate bowl, beat the egg whites until stiff peaks. Add the egg whites to the nog mixture, and gently mix with hand mixer. You don't have to worry about deflating the egg whites.

  3. Store in fridge for at least 2 hours, ideally overnight and enjoy. Will keep for 3 days.

Recipe Notes

If you want to use dairy, swap the almond milk with 100% grass-fed whole milk and the coconut milk with organic heavy cream.
