These Bulgarian honey cookies are soft and chewy and so easy to make. The cookies are made with almond flour so they are gluten free, and only take 14 minutes t bake in the oven.
Place the almond flour, cinnamon, baking soda, and salt in a small food processor and pulse a couple of times to mix the dry ingredients.
Whisk the egg in a bowl and add the melted coconut oil, vanilla, and honey.
Then pour the wet ingredients on top. Process, until the dough becomes smooth, about 30 seconds. If you don’t have a food processor, use a hand mixer, or do it by hand, just make sure to mix all ingredients very well. Let batter sit for 10 minutes.
Place some coconut oil or water on your hands and using a cooking dough portion scooper (that is about 1.2 tablespoons in size) or a spoon, scoop some dough and form it into a ball. Place the ball on a sheet tray lined with parchment paper and gently press on top to flatten it into about 1.5 inch circle.
Continue with the rest of the dough. You should end up with about 19 cookies.
