Grilled Kebabs

How to make juicy and smoked grilled kebabs loaded with flavor.

Ingredients

  • 2 pounds ground pork or beef
  • 4 teaspoons red curry paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 2 teaspoons sesame seeds
  • ½ teaspoon ground coriander
  • ¼ teaspoon ground cinnamon
  • ¼ cup freshly chopped mint & parsley
  • Salt
  • Ghee or avocado oil spray

Instructions

  1. Add the ground meat to a large bowl along with all of the ingredients and 2.5 teaspoons of salt. Mix well and allow to sit in the fridge for at least 1 hour, ideally 3-24 hours.
  2. Preheat grill to medium-high, or if using a traeger grill like I did, heat to 400F with the grill grate at the lowest setting. Form the kebab mixture into 4 equal portion and wrap the meat around the skewers. Make sure the meat is evenly spread out from top to bottom of the skewers.
  3. Spray the skewers with ghee spray and place oiled side down on the grill and close the lid. Cook for 8 minutes, spray the other side with more ghee, carefully flip kebabs, close the lid, and cook another 8 minutes. Remove from grill and allow to rest 5 minutes before serving.
