I wanted to challenge myself to make an extreme budget recipe using Bobby approved ingredients. This fried rice recipe will feed four people for $10 total.

This budget fried rice recipe is not only easy on the wallet, but it’s nutrient dense and made with best-in-class ingredients.

How To Make Fried Rice

The key to great fried rice is using leftover day old rice. I was able to buy a one pound bag of brown rice from Walmart for .88 cents.

By cooking it the day before the rice will slightly dry out and soak up all the flavors of the pan.

Brown the ground beef in a 12 inch pan until just cooked through. Remove beef from the pan and cook the broccoli and green onions in the same pan.

Add a splash of soy sauce to season the veggies then add the brown rice and beef back to the pan. Add 3 tablespoons of soy sauce then cook for 5 minutes, stirring often.

Make a well in the middle of the pan and add the whisked eggs. Stir continuously until the eggs come together then mix the eggs into the rice.

Add the green onions, mix well, and take the pan off the heat. Serve and enjoy!

Ingredients

  • 1 pound brown rice
  • 1 pound grass-fed ground beef
  • 1 bunch green onions
  • ¾ pound broccoli
  • 3 eggs
  • Soy sauce
  • Salt & pepper
  • Avocado oil

Instructions

  1. Make the rice the day before by preheating a pot over medium heat with 1 teaspoon of oil. Rinse the rinse well and add to the pot. Stir for 1 minute then add 3.5 cups of water along with ½ of teaspoon salt. Bring to a boil, reduce to a simmer, pot the lid on the pot and cook for 35 minutes. Turn the heat off and allow the pot to sit for 10 minutes without taking off the lid. Remove lid, fluff rice with a fork. Transfer rice to a large bowl, allow to cool, then store in fridge.
  2. Preheat a 12 inch pan over medium-high heat along with 1 tablespoon of oil. Once hot, add the ground beef, 1 teaspoon of salt, and a few cracks of pepper. Break the beef up so the meat is very small crumbles. Cook for 5 minutes, or just until the beef is cooked through. Remove the beef from the pan, but leave the fat behind.
  3. Meanwhile, Thinly slice the stalks of the broccoli and roughly chop the broccoli florets. Slice the white parts of the green onions fine and save the green parts for later. Preheat pan over medium heat with an additional 2 teaspoons of oil. Add the green onions, broccoli, pinch of salt, and a few cracks of pepper. Cook for 5-6 minutes then add 1 tablespoon of soy sauce. Cook for 1 minute longer.
  4. Add the rice and beef to the pan and mix well. Add 3 tablespoons of soy sauce to the pan, mix well and cook for 5 minutes. Mix the eggs well in a small bowl and make a well in the middle of the pan. Add 1 teaspoon of oil along with the eggs and mix very well. Keep mixing continuously until the scrambled eggs come together and then mix the eggs with the rice. Check for seasoning, you may need more soy sauce. Turn off heat, thinly slice the remaining green onions and add most of them to the pan, mix well. Serve and garnish with the remaining green onions. Enjoy!
