Ricotta fritters recipe

Lemon Ricotta Fritters

Ingredients

  • 1 cup ricotta cheese
  • 2 eggs beaten
  • 3 tablespoons sugar
  • 1.5 teaspoons vanilla extract
  • Zest of 1 lemon
  • ¾ cup all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon kosher salt
  • Vegetable oil
  • Powdered sugar

Instructions

  1. Pre-heat a heavy bottom pot with 3 inches of oil and bring to 350 degrees. In a bowl, combine the ricotta and next 4 ingredients, mix well. In a separate bowl, combine the flour and next 2 ingredients, mix well. Add the wet ingredients to the dry and use a spatula to thoroughly combine.
  2. Using two large spoons, form the batter into small football like shapes and carefully place in the oil, 4-6 at a time as to not over crowd the pot. Fry for 2-3 minutes until golden brown on one side, flip and repeat. Total cooking time should be about 5 minutes. You can always take one fritter out and cut through it to make sure it’s cooked through. When ready to serve, sprinkle some powdered sugar over the top along with some lemon zest and enjoy.
