This low carb meal prep is perfect for the ketogenic diet or losing weight. The ramen is full of flavor and seriously low carb and low calorie thanks to shirataki noodles. The lettuce wraps are part mushrooms and part ground pork, and oh so good. The entire meal prep is keto diet and weight loss approved.

Ingredients

For the ramen:

  • 1 cup chopped onions
  • 4 ounces shitake mushrooms
  • 3 cloves garlic minced
  • 1 teaspoon freshly grated ginger
  • 3 tablespoons miso paste
  • 2 quarts beef bone broth
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon sriracha sauce
  • 1 pound shirataki noodles
  • Carrots herbs, chiles for garnish
  • Salt
  • Avocado oil

For the wraps:

  • 1.25 pounds ground pork
  • ½ an onion chopped
  • 8 ounces cremini mushrooms
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger finely grated
  • 1 teaspoon sriracha sauce
  • 1.5 tablespoons soy sauce
  • ½ teaspoon toasted sesame oil
  • Lime juice
  • 2 tablespoons unsalted & roasted peanuts chopped
  • 2 tablespoons green onions finely sliced
  • 1 head of butter lettuce or iceberg lettuce
  • Avocado oil
  • Salt

Instructions

  1. For the ramen, cut the stems off the mushrooms and finely slice. Pre-heat a soup pot over medium heat along with 2 teaspoons of oil. Add the mushrooms, onions, and cook for 10 minutes. Add the grated ginger, garlic, and cook 3 more minutes. Add the miso paste, mix well, and cook for 1 minutes then add the bone broth. Raise the heat to high and add the sesame oil, soy sauce, and chili sauce. Once the soup is boiling, reduce to a simmer and allow to cook for 15 minutes. Check for seasoning, you will need more soy or chili sauce, adjust according to your preference. Drain and rinse the shirataki noodles and add them to the soup. Simmer another 5 minutes then turn the heat off.

  2. For the lettuce wraps, remove them stems on the mushrooms and chop into small pieces. Pre-heat a large pan just over medium heat for 2 minutes along with 2 teaspoons of oil. Add the onions and mushrooms and cook for 8-10 minutes. Raise the heat to medium-high and add the pork and use a wooden spoon or spatula to break the pork into small pieces. Cook for 3 minutes then add the garlic, ginger, and ¼ teaspoon of salt. Continue cooking a few more minutes until most of the pink color is gone from the pork and lower the heat to low. Add the sriracha, soy sauce, sesame oil, a little squeeze of lime juice, and mix well. Turn the heat off the pan once the pork is cooked through and check for seasoning. You will most likely need more soy sauce or chili paste. Add the peanuts and green onions, mix well and set aside.

  3. To assemble the lettuce wraps, fill individual cups of lettuce with the pork mixture and garnish with more peanuts and green onions. To serve the ramen, fill a bowl and top with grated carrots, sliced chiles, green onions, or any topping you want. The lettuce wrap mixture and soup will last in the fridge for 5 days or ca be frozen 2-3 months. Reheat the soup on the stovetop and the pork mixture in a hot pan. If using the microwave for the pork mixture, cover the open container with a wet paper towel and make sure not to overheat or it will get dry.

  1. Made this! It was a hit with my family. Next time I might put more stuff in the ramen. Kind of expensive to make if you have to buy all the ingredients and I had to go to 4 grocery stores to get the miso paste.
