Nutella Waffle with Caramel Sauce

Ingredients

  • 2 cups all-purpose flour
  • 2 tspn baking powder
  • ½ tspn kosher salt
  • 4 eggs
  • 2 tbsp sugar
  • ½ tspn vanilla extract
  • 4 tbsp unsalted butter melted
  • 2 cups whole milk
  • ½ cup toasted hazelnuts chopped, plus some for garnish
  • ½ cup chocolate chips

For the nutella filling:

  • 8 ounces regular cream cheese room temperature
  • 3/4 cup nutella
  • 2 tbsp cup powdered sugar
  • 1 tbsp cocoa powder
  • 1 tspn vanilla
  • Pinch of nutmeg

For the hazelnut caramel:

  • ½ cup sugar
  • 2 tbsp water
  • 1/3 cup plus 1 tbsp heavy cream
  • 2 tbsp unsalted butter
  • ½ tspn salt
  • 2 tbsp hazelnut liquor

For the pickled strawberries:

  • 1/2 cup maple syrup
  • 1/4 cup white wine vinegar
  • 1.5 cup strawberries sliced

Instructions

  1. For the caramel sauce, combine the sugar and water in a small pot over high heat and bring to a boil. Reduce heat to medium and cook until amber in color, about 7 minutes. Take off the heat and carefully add the cream(will bubble a lot). Return to medium low heat and whisk out any lumps. Immediately add the butter, salt, and liquor. Stir for 1 minute, or until everything is well combined, take off heat and set aside.
  2. For the strawberries, combine the maple syrup and vinegar in a small pot, bring to a simmer, take off heat, and add strawberries to pot. Set aside.
  3. For the nutella filling, beat room temperature cream cheese in a stand mixer or with a hand mixer on high until cheese has a slightly whipped consistency, 1-2 minutes. Add the next 5 ingredients and beat until everything is well mixed. Taste and adjust if necessary.
  4. For the waffles, add the flour and next 2 ingredients to a large bowl, stir, and set aside. In another bowl, add the eggs and sugar, and whisk for 1 minute until the eggs are light and fluffy and sugar has melted. Add the next 5 ingredients and mix well. Add the wet mixture to the dry mixture. Using a spatula, combine everything being careful not to over mix, it’s ok to have a few lumps.
  5. Cook waffles in a waffle iron. To plate, use your imagination and go wild with the nutella filling, caramel sauce, strawberries(take berries out of maple mixture), and garnish with chopped hazelnuts. The caramel sauce will keep in fridge for 2 weeks, and can be re-heated in microwave for about 10-20 seconds.
