Gluten Free Banana Bread

Dessi and Rose made this easy banana bread recipe on Facebook a while back. This week, Rose and I made the recipe into muffins and they were epic. The banana bread is gluten free and refined sugar free, and comes out even better than the one you grew up with.

We also swapped out sugar for coconut sugar and you can either use coconut oil or ghee. This really is the best banana bread recipe I have ever had.

How To Make Banana Bread

Start by combining the almond flour, tapioca starch, baking soda, and salt in a large bowl and mix well. In another bowl, mash the rip bananas and set aside.

Mix the coconut sugar and egg until light and fluffy in another bowl. Add the melted ghee or butter, vanilla, and apple cider vinegar.

Add the mashed banana to the wet ingredients and then add to the dry ingredients. Mix well, add the walnuts, and transfer the banana bread batter to a prepared loaf tin and bake at 350F for 50 minutes.

Allow the banana bread to cool for 20-30 minutes until you slice it.

Ingredients

  • 2 cups almond flour
  • 1/2 cup arrowroot starch, or tapioca starch
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 cup coconut sugar
  • 2 teaspoons vanilla extract
  • 1/4 cup ghee, butter, or coconut oil (melted)
  • 1 1/4 cups mashed overripe bananas ~3 bananas
  • 1 tablespoon apple cider vinegar
  • 1 cup chopped walnuts
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Lightly grease a 9x5 or 9x4 inch loaf pan, or line it with parchment paper. If making muffins, lining tin with paper liners.

  2. In a large bowl, combine almond flour, arrowroot starch, baking soda, and salt. In a separate bowl, beat together eggs and coconut sugar for 2 minutes. Add the vanilla, melted oil, mashed bananas, and vinegar. Beat on medium speed until well combined.

  3. ​Stir banana mixture into flour mixture until well combined. Mix in the walnuts and chocolate chips. Pour batter into prepared loaf pan or muffin liners

  4. ​Bake in preheated oven for 60-75 minutes, you want the exterior to be deep golden brown. Bake for 30 minutes if making muffins, or until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack and cool another 10-15 minutes before you enjoy.

      1. Hi Bobby! Ok, now that I’ve been in quarantine for the last few weeks, I finally pulled out this recipe (that’s been sitting on my kitchen counter for over a YEAR!). It turned out delicious and moist. I did have to get creative because I did not have any tapioca flour (substituted with regular white flour), no white rice flour (substituted with the brown rice flour), no coconut butter (substituted pasture raised butter) and added about 1/2 cup of water, and about 2 tbs of raw honey (to help ensure it was going to be moist)…so I know my version is not gluten free and dairy free, but it turned out delicious. I ordered the missing ingredients on Amazon, so I plan on trying this recipe again. Thank You 🙂

  2. Hello Bobby!
    My whole family and I are in GF,DF diet and We all love banana bread. I was wondering if we can substitute the bunch of different flours for just one mix of GF flour?
    I want to make this jummy looking bread but I do not want to try and error and waste all this ingredients and money in case doesn’t work.
    I want to know if it’s possible and works first with the GF mix flour.

    1. You can use your favorite GF flour mix. My personal favorite is the GF flour mix from Trader Joe’s called “Namaste”.
