My favorite is the gluten free dairy free banana bread, made with coconut oil and coconut sugar. The almond chocolate milk is to die for! It was inspired by a similar milk I had in Venice Beach, CA.
I love using coconut oil and coconut cream to replace butter; coconut milk/cream and almond milk to replace milk/cream. To make buttermilk, I mix almond milk with a little bit of lemon juice.
My favorite flours are blanched almond flour, brown and white rice flour, tapioca starch and coconut flour. Coconut flour is best used sparingly as it tends to dry out the baked goods. I avoid using bean/chickpea flours and they tend to have an unpleasant taste in baked good.
White Sugar Substitutes
When it comes to sugar, I like replacing the white sugar with coconut sugar, stevia, honey or dates and bananas.
